Because we get a good feeling when there's no peeling! Potato skin is packed with nutritious goodness and full of flavour, plus being skin-on means less delicious potato goes to waste, so it's a potato no-brainer to us! In fact, we'd even say that it makes skin-off fries seem less 'a-peeling'.
